Beer Braised Onions for Summer Grilling

Before we moved, I had some extra beer to "get rid of," so this recipe was born.

My friend Kristie was visiting from Pennsylvania and we had a feast of veggie burgers, grilled plum and arugula salad, and macarons. It was delightful. The best part of the veggie burgers was the onions. Everyone agreed, even my meat-eating husband, that these onions added an incredible flavor to the burgers. They "fancied up" our dinner and our taste buds were grateful.

As a side note, if you're looking for a decent dairy-free cheese to melt on your burgers, I recommend the Veggie Slices brand. They seem to melt fairly well and taste pretty good in sandwiches and burgers.

Beer Braised Onions for Summer Grilling

1 T. extra virgin olive oil
1 large yellow onion, sliced
8 oz. beer (I used Yuengling Lager)*
1 tsp. organic cane sugar
1/2 tsp. sea salt

*use a gluten-free beer to make this recipe gluten-free

Directions
In a large sauce pan, heat up the olive oil. Once it's heated, add the sliced onions until they are translucent.

Add the rest of the ingredients and cook (simmer) for at least 15 minutes. Most of the liquid should be absorbed. The onions should be soft and brown.
