As you can see, I’ve been out of commission for a while — we had our second child, our son, born at the beginning of September. It’s been a whirlwind! A week after he was born, we evacuated for Hurricane Florence, and nothing’s quite been the same since.
I joked with my mom, “Jonny came in like a lion and out like a lion!” (I was pretty much sick the whole first trimester of my pregnancy with a stomach virus and then Hand Foot Mouth disease. And then we ended it with a hurricane. Go figure!)
Although I’ve not been cooking up my own recipes as of late, I have been baking some other people’s! Here is a list of my recent favourites:
For a potluck, I made these classic fall molasses cookies — but I had no molasses in my pantry! So, I subbed maple syrup for the molasses, and instead of ginger, I used pumpkin pie spice. They turned out SOOOO yummy. I highly recommend the switch!
And, I’ve been very into Ambitious Kitchen lately. I love her style and her healthier recipes:
Marbled Pumpkin Muffins – these are to DIE for! I’ve made them twice and doubled the recipe each time. I’ve popped them into the freezer so I can enjoy them for a few weeks! Freezer muffins are a must-have with a newborn.
Salted Tahini Cookie Dough Bites – Yum! These are different but equally good. I recommend using mini chocolate chips if you can.
Zucchini Brownies – I made these twice as well, and they are delish! Take her advice and pop them into the fridge. It keeps them together better, and it makes them taste like a fudgy treat!
