Tex Mex Boo Bites

I do make savory things from time to time.  It seems rare, I know.

These Boo Bites are thyme biscuits filled with a spicy black bean puree.  You can simply empty a can of black beans into a blender, with a few cloves of garlic, cumin, chili powder, etc.  Or, you can buy a can of refried beans :-)

I toyed around with the name of these.  One that was cute, but a mouthful, was "Terrifying Thyme Boo Biscuits".  But then I thought that the "tex mex" part was important to mention.  

Call them whatever you want; they're delicious!

2 c. organic white flour
2 tsp. baking powder, aluminum-free
1/4 tsp. baking soda
2 T. flaxseed, ground
1 tsp. sea salt
1 tsp. dried thyme
4 T. coconut oil, softened
3/4 c. almond milk, or other non-dairy milk
1/4 c. beer, like Yuengling Lager

1 c. pureed black beans

Preheat the oven to 425°. Line a baking sheet with parchment paper.  

In a large bowl, combine the flour, baking powder, baking soda, flax, salt, and thyme.  Stir and make a well in the middle of the mixture.  Set aside.

In a small Pyrex container, measure the beer and milk; add the oil and stir.  Pour this liquid into the middle of the well and stir to combine.

Cut two pieces of parchment.  Separate the dough into two equal globs.  Flour one of the pieces of parchment and flour one chunk of the dough.  Roll it out to about an inch of thickness.  Repeat this with the other chunk of dough.  

Add the black bean puree on to the surface of one slab of dough and place the other slab on top, like a sandwich.  

Using a cookie cutter, cut out your desired shapes.  Place them on the baking sheet.  You will inevitably have leftover dough; I rolled mine into little dough nuggets and baked them with the ghosts.  They don't look as pretty, but they are still yummy!

Bake the ghosts and nuggets for 15-20 minutes.

Dip the ghosts in salsa or guacamole.  They will add a spark to any Halloween party!
