A few weeks ago, hubs and I went to the small town of Culpeper, Virginia to do some shopping and walking around. It's such an adorable small town.
One of the stores we went into was selling honeydew popsicles; man, they were so refreshing! I never would have thought to put honeydew in an ice pop. I knew that I had to recreate it for you...and booze it up!
I bought a small honeydew from Wegmans and I was skeptical as to whether or not it would yield enough "meat" for this recipe -- and boy, it delivered! Not only did I get about three cups of super-fresh honeydew, but it was the most refreshing, juiciest fruit I've bought all summer!
A side note about how I chose this honeydew: you want the fruit to be fragrant when you pick it up and you also want to see "spidering" on the fruit -- those weird lines on the bottom where the fruit sits on the ground. If you see those lines, it means that the fruit is ripe (for the most part). Regardless of your skills, it's always a gamble to buy a melon!
Honeydew Lime Poptails
1 small honeydew melon, cubed
zest and juice of one lime
2-3 T. white rum
sweetener, like pure maple syrup or stevia, if needed
Could these ice pops be any simpler? Blend the ingredients (along with any juice from the melon) in a blender. Taste the puree to see if you need additional sweetener. This mixture yielded about 3 1/2 cups of puree.
Pour the mixture into the molds and freeze overnight. This recipe makes about 6-8 standard sized poptails.
