I know, I know - it's the middle of winter and I'm making popsicles. Hey, it didn't stop me from making Mint Chocolate Chip Ice Cream, so there's that too.
I'm not the big ice pop fiend in our house; my hubby - who declares that he doesn't like dessert - is always sneaking them out of the freezer. He says that he really likes them with the booze because they're a little softer than traditional popsicles. He likes to bite through them.
Ugh, my teeth hurt just thinking about it.
As a side note, you need to be exact about the booze you put in here. First, buy some BPA-free ice pop molds that you like. I got some "slow pop" Zoku molds from Amazon that I really like. I bought a cheaper second set and they suck. I gave them away. They were hard to get out of the molds and broke easily. Womp womp.
Next, find out how much liquid they can hold. My pop mold holds about 3 cups of liquid; only 1/4 cup of that can be booze. Remember to keep this ratio or your pops will never harden correctly.
My husband's the coffee drinker in the family. Coffee and bourbon are his favorites, so I made these pops for him.
1 c. brewed coffee
1/4 c. coffee-infused bourbon (learn more about infusing your own liquor!)
1 3/4 c. canned coconut milk, or other non-dairy milk
Need a little sweetness? Add a few tablespoons of pure maple syrup. My hubs drinks his coffee black.
Combine the ingredients and stir well. Pour them into the ice pop molds.
Freeze the pops for 6+ hours, preferably overnight. It's so easy to make your own popsicles!
