Homemade Vegan Eggnog

Eggnog and I have never been best friends.

To be honest, I've never really liked creamy drinks.  I'm talking whole milk, White Russians - pretty much anything that is thick and gross.  I think that I sit down and think about all of the potential grossness that's in them.

Solution: this homemade eggnog is a breath of fresh air.  It has limited ingredients and you don't have to question what's in it!

Adapted from Pickles & Honey

1 c. raw cashews, soaked in water for at least 2 hours
3 c. water
5 medjool dates, pitted
1 medium banana, frozen
2 1/2 tsp. vanilla
1 tsp. nutmeg
1/2 tsp. cinnamon
pinch of cloves
3 T. rum
3 T. brandy
3 T. bourbon

Combine all of the ingredients into the blender - it's that easy!  Make sure that you blend it well.  It should be frothy and creamy.

I bought these adorable reindeer mugs at the store and I couldn't wait to use them!  They are just so festive and fun!  My husband just shakes his head :-)

This recipe makes four servings.  Be sure to top your eggnog with nutmeg and a few cinnamon sticks.  I have two recipes (French Toast Casserole and Eggnog Streusel Muffins) coming up that use this eggnog, so get ready!
