In honor of National Mojito Day, I whipped up these poptails. In my not-so-humble opinion, there is nothing better than fresh mint in a summer cocktail. Mojitos have grown on me and have become my go-to drink of choice.
1/4 c. gin (or white rum)
approximately 30 fresh mint leaves
1 T. pure maple syrup
1/4 c. lime juice
1/2 c. organic apple juice
scant 2 c. natural ginger ale
In a blender, combine all ingredients, except for the ginger ale. Once everything is pureed, add the ginger ale and stir with a wooden spoon.
Pour the mixture into your pop molds; this recipe should fill six regular-sized molds.
Use these poptails as a quick cool-down on a hot summer day!
