In Virginia, the heat’s been brutal this summer. Don’t get me wrong; I love ice cream, but sometimes when it’s stifling, you just want an ice pop. I had some leftover coconut milk and a fresh pineapple – this pop does not disappoint!
One note about making boozy pops – do not put more than ¼ cup of alcohol in them. They just won’t freeze correctly. Your stick will not stay in. (Can you tell that I learned this from experience???)
I searched for a regular ice pop mold without BPA and it was actually a tough task! I was able to find this one on Amazon. I’ve made several types of pops now and it works magnificently.

2 c. fresh pineapple (it really makes all the difference)
3 T. fresh cilantro leaves
2 T. lime juice
½ of a banana
2 T. maple syrup
¼ c. coconut rum, or regular rum
¾ c. coconut milk, from a can
So easy – simply place the ingredients in the blender and puree them! Once they are blended to your liking, pour them into the pop mold and let the pops set for 8 hours (at least) or preferably overnight.
After a long day in the sun, these pops are the perfect escape from the summer heat.
