I like smaller desserts. It's just my husband and I, so we can't eat a whole cake quickly. That's pretty much why I like single serve desserts like my microwave brownie in a mug. This Apple Roll serves two people and is super quick and easy to make.
For the filling, you can use 1/2 cup of my Boozy Apple Butter, or you can quickly chop up some apples and reduce them with some water, maple syrup, and cinnamon.

1/2 c. organic whole wheat pastry flour
1 tsp. baking powder, aluminum-free
pinch of sea salt
1/3 c. almond milk, or other non-dairy milk
1 T. bourbon
1 T. pure maple syrup
2 T. unsweetened applesauce
1/2 tsp. cinnamon
1/4 tsp. vanilla
1/2 c. Boozy Apple Butter, for the filling
Preheat the oven to 420°. Line a 8x8 pan with parchment paper and spray it with a little olive oil or coconut oil. (I didn't do this and it will make your life easier!)
In a small bowl, combine the flour, baking powder, salt, and cinnamon. Set aside.
In a small cup, combine the liquid ingredients: milk, bourbon, syrup, applesauce, and vanilla. Pour these ingredients into the bowl with the dry ones. Don't over mix it, but make sure everything is incorporated.
Pour the batter into the prepared pan. Bake it for about 10 minutes.
Once the cake cools slightly, remove the parchment from the pan and place the cake face-down on the cooling rack. Slowly peel the parchment from the cake.
Spread your apple butter over the cake and roll - it's that easy! The roll might not look perfect, but it sure does taste good, especially warm!
